Brad. We have used the materials in the drop in our small winery. It is gelatin for reducing the tannin astringency, gum Arabic for reducing the tannin bitterness and improving the body. The packages that G has allow you to add One Little Drop in a glass to improve the smoothness or perhaps two drops if the wine is really rough. This material has been used for well over a century in the wine making business and has been proven as a staple wine making technilogy. Other questions, let me know.

In fact, I just finished another experiment with a chardonnay kit, and will post the initial results soon! A much more controlled experiment this time, too.

How did this experiment turn out? And have you tried this with other wines?

You are correct, my editing error! Definitely only fine lees, this post has been edited to correct the error so no one leaves the wine on gross lees due to my negligence. Thanks for catching that!

The wine shouldn't be left on the gross lees, as this will cause off flavours and aromas, batonnage is the stirring into the wine of the fine lees (after 1st or 2nd racking)

Not at all like the Vinturi, actually, this product has some commonly used fining and smoothing agents typically used by winemakers but usually added prior to bottling. But, it is their proprietary formulation, so I'll give them the option to disclose the contents.

Interesting. Any indication as to what it is actually doing to the wine? Is it some sort of ph balance or turbo oxidation that is occurring (similar to the vinturi)?

I have not tasted it yet, I've been very patient! I should be tasting it soon, though. But, this is not the regularly stocked Chateau du Pays from Cellar Craft, it was a 2011 limited edition -- so there are no more to purchase. The kit that is always available is likely going to be very similar, though, and my experience so far is that they are all amazing!

Loved the article! I'm coming out from VA to help Mike and Tricia with their Zinfandel harvest next week, and am so looking forward to returning to Fallbrook and Live Oak Vineyard! I've had enough of hurricanes, tropical storms and tropical depressions...it's time for some West Coast fun with good friends.
