The wine was definitely better, very well integrated and no soapiness. This wine is probably peaking and should be drunk over the next few months. Still not a very exciting or big wine, but very drinkable. Went very well with pasta with gorgonzola-pumpkin-mushroom sauce.</p>

			<content:encoded><![CDATA[<p>A few notes on the latest wines.  It is a little early for most of them, but you don&#8217;t know how they&#8217;re developing without tasting!</p>
<p>Australian Chardonnay: A little soon after bottling to taste, but I couldn’t help myself.  Still too young, but nice. Buttery nose, lots of heavy oak in the attack and flavors fall a little short after that. Quite crisp. Lingering finish. Drinkable now, but will be very nice in a few months. Probably not giftable at this point.</p>
<p>Also popped a bottle of Chamblaise, from the first set.  A very nice drinking wine. Definitely changed a lot over time, a lot more vegetal especially in the nose. Very crisp and clean. Worth the work, this one gave me trouble both bottlings this year.</p>
<p>Cab merlot tasting: 6 month tasting (close enough). Very fruity nose, smells and tastes very young still. Flavors rounding out but still not quite balanced, but falling into place. Hopefully will mellow out in a few more months. Slightly sour. No soapiness, no fizz. Definitely improving with age.</p>
<p>Bourgeron Rouge: 6 week tasting! Still very young, but shaping up nicely. Sourness is tamed but still present. Tastes not unlike a Beaujolais Nouveau. Sour cherry in the nose with a little soapiness. Bright fruity flavors of cherry and plums, maybe a little overripe strawberry. A little spice.</p>

<p>In making this wine, I became obsessed with keeping oxygen out of the wine.  Watching my hubby make beer, he would often purge the carboys with CO2 or nitrogen gas before <a href="http://wineintheshower.com/index.php/winemaking-definitions/rack-racking/">racking</a> into them to reduce oxygen exposure;  I rationalized that this should also be good practice for winemaking.  However, after I started incorporating this practice I got suspicious why this had not been emphasized in the instructions so far.  I found out it is because oxygen actually plays an important role in wine flavor development.  A little bit of oxygenation as the wine is being made is actually good;  thus the barrel is a fine vessel for the wine to sit in, since there is a small amount of oxygen that interacts with the wine.  I’m not sure how this will ultimately effect the outcome of this wine, but it’s time to bottle either way.</p>
<p>There was no oak in this wine kit.  Final alcohol 11.8%. This wine came out a nice clear ruby color, without filtering. Initial impressions are very fruity nose, but very tart taste that falls flat. Hopefully this one will shape up better, not exciting at bottling (2 months bottle aging is recommended).</p>
