degas / degassing

The process of releasing trapped carbon dioxide from wine.  Wine will naturally degas over time;  however, wine kits typically are not kept in fermentation or aging vessels long enough to degas sufficiently.  Therefore, wine kits need to be actively degassed by vigorous stirring or “whipping” with an attachment driven by a drill.  Wine that is bottled but not properly degassed will be fizzy or foamy when opened.
