It’s been 6 months since I touched my “La Jolla Caves” Winexpert Montagnac Vieux Chateau d’Oc, wanting to give it time to come together better. Now it’s at the 2-year mark, which sounds like a good time to test it out. I did not decant this time, I wanted to see how it developed out of the bottle. The “kit nose” is very faint now, mainly light aromas of spice and plums with brambles. Not foamy. Flavors are very well melded now, still sour up front, with flavors of preserved plums, quince, and dark berries with hint of almond. My hubby pointed out that there are very rich tannins in this wine, and asked if this kit came with a grape pack; in fact, this was the first kit I made with a grape pack, and now we are resolved to mainly make red kits that have “skins”. More time will mature this wine more, but it’s definitely coming together.
