Since our syrah<\/a> never finished malolactic fermentation<\/a>, and since the free SO2<\/a> is below 10 ppm, I decided to try to restart the MLF with some fresh bacteria.\u00a0 I set up 200 mL of filtered water with some acti-ML nutrient and added 2 grams of dry “Bacchus” MLB<\/a>.\u00a0 While that was incubating, I rechecked the malic acid levels, and they are still > 500 mg\/L.\u00a0 After 15 minutes I stirred 100 mL of bacteria soup into each 6-gallon carboy and gave them a stir.\u00a0 Hopefully this will get them going!<\/p>\n
