An organic compound that appears in wine as a flaw.ย  Presence of acetone odors or flavors could be the result of non-sterile technique and contamination of the wine, or a fermentation by-product of yeast that fermented at a high temperature.ย  Acetone can be eliminated from wine by splash racking, although it is not guaranteed to work in every instance.
