The mass of solid matter (seeds, skins) that rises to the surface of the wine during primary fermentation of red wine. The cap is punched down to get mixed in with the wine, enhancing colour, flavor and tannin.ย  If the cap is not broken up during fermentation, gases such as sulfur dioxide can build up in the wine underneath, resulting in a rotten egg odor and flavor.
