Following primary fermentation (and pressing in the case of red wines), wine is put into a closed vessel (barrel or carboy fitted with an airlock).ย  Fermentation continues, albeit slowly, with any remaining viable yeast and residual sugars;ย  malolactic fermentation might also occur during this time.
