sur lie

Literally, “on the lees”.  The aging of wines on the lees, as opposed to racking the wine off of the lees to reduce contact. Sur lie aging imparts a toasty quality and enhances complexity.  However, extended contact with lees can impart “off-flavors” to the wine.  The decision to do sur lie aging is a matter of taste preference in many cases.
