A long tube used to take samples of wine out of fermentation or storage vessels, including carboys or barrels.  Wine thiefs are often simple glass pipets, although plastic versions with a specialized tip that will retain the sample until touched to the side of the fermentation vessel are available;  alternatively, a turkey baster can be used for the same purpose.
