I had some friends over last night to taste the cabernet sauvignon and 3 merlots made from fresh grapes. We first by tasted each individually, starting with the cab and then the barrel merlot, merlot A, and merlot B. It was very interesting how much all of the wines have changed even since my last […]

I noticed that quite a bit of sediment fell out of the home merlots, so I decided it was time to rack them off again and test them for pH and acid levels. I also figured the Free SO2 levels had dropped (I give up on the test strips) and added ¼ tsp Kmeta to […]
Since Dave has already drunk half of his bottled wine, I asked if he had any acetone problems, and he said no. So, I checked one of the small bottles of extra merlot, and was very happy that there was no acetone odor or taste there. OK, then something happened to the carboy. I checked […]
I used a 5 micron inline filter to bottle the Argentinian Trio today, and I noticed that the last 2 bottles had paper floating in them! Total bummer. I’m not sure if I didn’t set something up right, or what. Oh well, I’ll mark the corks on these and keep them for home consumption. The […]
We’ve been trying to get organized to bottle this wine for a while now, and we finally set a day and got it done. I brought my portion of the wine home in carboys and a few miscellaneous bottles. Dave and Josh wanted theirs bottled, so that’s what we did. Dave did a few blending […]
The burgundy is now about a year and a half old. Nose of cherry with traces of herbs. No fizz in this bottle, did not decant or vacuum pump, just splash poured. Flavors of caramel, plums, and light cherry. Getting more of the “bacony” and “smoky” flavors just now. Taste definitely integrated better, quite drinkable […]
Time to rack and check the home merlot. I splash racked again, and tested/tasted it. The Free SO2 seemed to be below 20 ppm, so I’m going to try to restart MLF with the dried bacteria I got in December. I’m not optimistic, because I’m pretty sure the bacteria is no good after this long, […]
Nose of raspberry and cherry, with hint of the soapiness. Still foamy. Tasting very young. Sour cherry and oak. More integrated and tasty, but not ready yet.
One year tasting of the rhone blend. Decanted for about an hour. A little bit of the weird soapiness I get with the kit wines in the nose, also notes of plum and oak. Foamy. Sour flavors of black cherry, blackberry, and raspberry with strong oak and soapiness also. Long finish, but quite sour and […]
Did not decant, probably would benefit from decanting at this stage. Not foamy, seem to finally have that under control. Big nose of red ripe fruits with sour edge. Very clear, dark garnet in color. Slightly fizzy on the tongue, with very tart flavors of sour cherry and pomegranite. Mainly fruity, very light spice, medium […]
