degas / degassing

The process of releasing trapped carbon dioxide from wine.ย  Wine will naturally degas over time;ย  however, wine kits typically are not kept in fermentation or aging vessels long enough to degas sufficiently.ย  Therefore, wine kits need to be actively degassed by vigorous stirring or โ€œwhippingโ€ with an attachment driven by a drill.ย  Wine that is bottled but not properly degassed will be fizzy or foamy when opened.
