malolactic fermentation / MLF / malo
A process where malolactic bacteria convert tart malic acid present in wine into lactic acid, which has a softer, creamier taste.ย Completion of MLF will yield a more stable wine, as spontaneous MLF sometimes occurs in wines that have residual malic acid.ย However, not all wines benefit from MLF, and so wine needs to be stabilized or otherwise treated to inhibit the potential of spontaneous MLF.
