A comparison of the density of one liquid (in our case wine or must) to that of water.  In more basic terms, the relative density of one liquid (such as wine) to water.  Sugars in wine must give it a higher specific gravity than water;  as the sugars are fermented to alcohol, the specific gravity drops.
